Our standards are enforced through bi-monthly third-party auditing of our restaurants and ongoing team training. We require that our vendors can provide food safety certification and logs to support our purchases.

Impact Points:
Beef. We source beef from suppliers who are leaders in sustainable business practices, which include participation in the U.S. Roundtable for Sustainable Beef and the Global Roundtable for Sustainable Beef, which advance, support and communicate continuous improvement in environmental, social and economic sustainability across the beef value chain.
We also partner with our beef suppliers to ensure that the health and welfare of the animal remain a priority. This begins with ranchers and producers, and their dedication to providing animals with the utmost care and treatment.
Additionally our beef suppliers adhere to the National Cattlemen’s Beef Association (NCBA) Beef Quality Assurance (BQA) cattle handling standards.
Wagyu Beef. Our Wagyu Beef is primarily from family farms in Australia and fed on non-GMO corn free grain for exceptional quality marbling. Our suppliers implement the world’s best farming practices to provide optimal care for their cattle, their environment, their people and community.
Lamb. We source free-range and grass-fed lamb from family farms in New Zealand and Australia.
Our menu options and guest experience naturally allow our guests to customize their dining experience and accommodate a variety of dietary needs – whether that be gluten-free, keto, paleo or vegetarian.

Our food safety standards encompass detailed requirements for the storing, handling, preparation and serving of food by food type to ensure freshness, quality and cleanliness. 100% of our restaurants are audited bi-monthly, in addition to daily checks per shift and by local municipalities.

According to the EPA, food and packaging/containers account for almost 45% of the materials landfilled in the United States. We leverage recycling programs and use recycled materials in every way possible to minimize our impact and that of our guests.
