Pairings are everything in Brazil, but we’re not just talking about wine and cheese. Fresh fruit is always paired with meat – like pineapple with pork. Fruit not only adds an extra layer of flavor to the dishes, but also a layer of color to each plate.  This preference for fresh fruit is what inspired the bountiful seasonal fruit found on Fogo’s Market Table. 

  • Tip: Look to drink your fruit in Brazil, too. Fresh juices are generally served with every meal – from pineapple juice to watermelon juice – and are sometimes accompanied with fresh mint leaves.
